Our favorite sort of summer cooking is fresh fruits and anything that can be grilled outside on the patio to be enjoyed with friends. This recipe comes to us from chef Olivia Wilson and uses our Mushroom Maple Syrup to make a sweet, tangy glaze to brush over seasonal mushroom or vegetables.
Mushroom Maple Syrup Glazed Mushroom
Ingredients:
1/2 lb oyster mushroom, whole (maitake could could work too)
2 dried chillies (costeno, guajillo, ancho or pasilla)
1 clove garlic
2 T Mushroom Maple Syrup
1 T vinegar (acv, red or white wine) I used homemade strawberry vin
Olive oil
Salt & pepper
Tools Needed:
-grill basket or cooling rack (can also do in a pan with a weight)
-mixing bowl
-tongs
-whisk or fork
-mortar pestle or spice grinder
Start your grill, charcoal or gas.
Prep your mushroom hunk by liberally coating with olive oil, I probably used 1/4 cup, making sure the olive oil is fully coating every part of it and in between the crevices. season well with sea salt and freshly cracked black pepper. about 2 t salt and 1 t pepper. Place on your grill basket and close shut so it is pressed between the racks.
Make your glaze:
toast chillies either over the grill in a pan or on the stove, until darkened on all sides. remove from heat, let cool until easy to handle. Twist the ends off and empty the seeds out. Place chillies in mortar and pestle and grind until broken up into a medium dust, does not need to be finely ground. Place in a mixing bowl, add one garlic clove minced or grated in using a microplane. Add your maple syrup and vinegar. Taste and adjust seasoning, add salt and pepper, maybe more vinegar, syrup or chillies if desired!
If using charcoal, arrange your coals on one side of the grill. Place your mushroom on the cool side of the grill and cook for about 10 minutes with the cover on. Flip and move over to the hot side of the grill, cook for another 5 minutes, flip again, monitor the color and move to cool side if needed. Your mushroom should be deeply brown and charred all over, remove from basket and place on tray, pour your glaze all over and place back on grill for a couple of minutes to caramelize. Remove and brush with more glaze until glistening! Serve with any other grilled veggies, steamed rice, potatoes etc.
